French Beans fry curry

Ingredients

2 cups chopped french beans
Curry leaves

For tempering
1 tsp mustard seeds
1 tsp chana dal
1 tsp urad dal
1 tsp jeera
3 red chillies
1 tbsp popula karam
1 tsp sesame seeds
oil
salt to taste
A pinch of turmeric

Method 

 

 

  • Take a deep pan and add 1 tbsp of vegetable oil. Add mustard seeds, chana dal, urad dal, jeera, red chillies, curry leaves and mix well.
  • Add the chopped french beans and mix well. Add salt and cover it with a lid so that it is cooked properly. Keep mixing it inbetween. It will take 15 min to cook properly.
  • Sprinkle Popula karam and sesame seeds and fry it for 10 more minutes.
  • The beans will turn crispy and it tastes really good with chapatis or rice.

Drumstick rasam

Ingredients

7-8 Drumsticks 3″ pieces, tender and fleshy ones
1/2 cup tomato chopped
1/4 cup Toor dal
A lemon sized ball of Tamarind or 1 tsp tamarind paste
2 tbsp Rasam Powder
Salt to taste
1/4 tsp Turmeric powder
1/4 tsp Jeera seeds
1-2 Red Chillies (dried)
A pinch of Hing
A few Curry Leaves (kadipatta)
Oil or Ghee for frying
A few Coriander leaves, chopped fine

Method

 

  • Pressure cook the tur dal along with drumstikcs till it’s soft
  • Soak the tamarind in 4 cups water and strain the juice
  • Take a deep dish and add oil and add mustard, jeera, hing, red chillies, curry leaves.
  • Add the tomatoes, turmeric powder, rasam powder and salt. Mix it well and let tomatoes cook. Then add tamarind juice. Keep on gas in medium flame.
  • Bring the whole mixture to a boil.
  • Add the tur dal and drumstikcs and boil on medium flame for 5-6 mins.
  • Garnish with coriander leaves and lemon juice, serve hot with rice.

Black eyed beans curry

Black eyed beans or lobhia (in hindi) is one of the rich source of fibre..here are some details

Diet Nutrition & Black-Eyed Beans:

Black-eyed beans have a smooth texture, pealike flavour and are good when mixed with other vegetables. Like most beans, black-eyed beans are rich in the best sort of fiber – soluble fiber – which helps to eliminate cholesterol from the body. They are a good source of folate, potassium, copper, phosphorous and manganese. As a high-potassium, low-sodium food they help reduce blood pressure. Not only are they low in fat, but when combined with grains, beans supply high quality protein which provides a healthy alternative to meat or other animal protein. Beans also contain protease inhibitors which frustrate the development of cancerous cells.

Here is one simple beans dish..try it out and let me know! :)

Ingredients

1 cup Black eyed beans soaked overnight
1 cup chopped tomato
1 onion finely chopped
2 green chillies finely chopped
1 tsp ginger garlic paste
1/2 tsp garam masala powder
or
1/2 tsp pepper seeds
1/2 tsp dhaniya seeds
2 tej patta or bay leaf
3 cardamom pods
1/2″ in cinnamon stick
1/2 tsp cumin seeds
salt to taste
1/2 tsp red chilli powder
a pinch of turmeric powder
2 tbs Oil

Method

  • In a pressure cooker, add oil and fry all the masala ingredients one by one.
  • Fry onion and green chillies till onions are translucent. Add ginger garlic paste and fry well.
  • Add chopped tomatoes and add salt and let it cook
  • Add the soaked black eyed beans and add 2 cups of water. Pressure cook till 3 whistles.
  • After it is cooled off, take the lid off and cook again for 10 min. Adjust salt and red chilli powder. You can add a little bit of garam masala here.
  • Garnish it with coriandar leaves and serve hot with either rice or chapatis

Aloo kurma or potato curry

Ingredients

2 cups potato cubes
1 cup tomato chopped
1/2 cup onion sliced
1 green chilli chopped
1/2 tsp ginger garlic paste
4 cloves
cinnamon pieces (2 small)
1 cup water
Red chilli powder
turmeric
salt to taste

For tadka or tempering

1/4 tsp mustard seeds
1/4 tsp jeera
2 red chillies

 

Method

  • Add oil in a pan and add the tadka ingredients.
  • Add chopped ginger garlic paste,onion and green chilli. Fry till onions turn translucent.
  • Add cinnamon and cloves and mix well. This will give a nice aroma. Add salt, turmeric and 1 tsp red chilli powder.
  • Add chopped potato and cover with a lid. Let it cook for at least 15 min. Keep mixing in between.
  • Add chopped tomatoes and again cook for 5 more minutes on medium high.
  • Add water slowly and keep mixing. Cook for 10 more minutes till it becomes a thick gravy. Garnish it with chopped coriandar leaves. This curry goes well with chapatis or hot hot biryani.

Vegetarian seekh kabab

i had always imagined what it would be like to eat grilled kababs. I had heard about non vegetarian seekh kababs a lot but since i am a veg..i thought of making veggies kababs. We recently brought a BBQ  grill and its quite a fun to BBQ and eat when the sun is shining..ofcourse we continued grilling even in the night!! Well..After searching a lot, I finally decided to make my own style of kababs. I had already sokaed moong dal and beautiful sprouts had come out. So my main ingriedent was moong sal..high protein rich legumes!

 

If you have any kabab paste left, you can make patties too. Stuff them in bread, and eat it like a sandwich!! Personally, i dont like to soak and fry kababs in oil..they unnecesarily absorb lot of oil which is bad for health. Instead of that, i just roast them on a flat pan..by just adding few drops of oil.

 

Ingredients:

200 gm boiled spinach leaves (1/2 cup puree)
2 cup boiled moong sprouts
1 cup boiled potatoes-mashed
2 tsp green chillies-chopped fine
2 tsp ginger- garlic paste
1 tsp salt or to taste?
1 tsp chilli powder or to taste
olive oil to brush

Method:

Blend the palak, moong daal, potatoes, green chillies, ginger and garlic in a blender. Mix in the salt and chilli powder. It should be a dough like consistency. Shape into tube like shapes around a skewer and BBQ, brushing with oil now and then. Add cut bell peppers,onions and paneer cubes. I added some mushrooms too.
