Yummy Cheese straws

I finally made cheese straws at home..i used to dream abt making these…:) it reminds me of my good old campus life..and RAINBOW!! I miss delhi…. :)

Ingredients

Pastry sheets
1 cup shredded cheese (parmesan,cheddar or pepperjack)
Salt to taste
1 tsp pepper
1 Egg yolk mixed with 1/2 tsp water and whisk it well.

Method

  • Take out the pastry sheets from the packet and cut the sheets into three rectangular sheets.

  • Take one of the sheet and apply one coat of egg yolk. Sprinkle salt and pepper. Sprinkle cheese evenly.

  • Cut small perpendicular pieces..and twist like a roll and place them on a parchment paper lined tray

  • Bake at 350F for 15 min..Take them out and cool it on a rack.

  • Savor the straws with hot hot ginger flavored tea

Noo..nooo..noodles…

I like to stuff noodles with lot of veggies…otherwise its quite boring to eat just noodles….one bowl of hot noodles..and a hot cuppa of tea…its enough for a brunch :) :)

Happy Deepawali..celebrate with yummy Jalebiiii

Hii..all..Happy Deepawali to all!! Its time for sweets..sweets sweets. Deepawali is a time when one can gorge on sweets happily :) And also its been quite a while since i have made any sweets..Jalebi is one thing which i always wanted to make..but never tried it. Whenever I think of Jalebi..i remember that dhara ad..that little boy says the word “Jalebi” so cutely…I think more people got interested in eating jalebi more than buying that oil brand!!! :D

Frankly speaking i dont know whats it called in english…i only know jalebi :) :) flour circles?? it would be funny to describe it in english..anyhow..here is how i prepared my first ever jalebi….

 

jalebi by you.

Ingredients

1cup plain flour (maida)
1/4th cup gram flour (besan)
1 cup sugar
few drops yellow colour
2 tbsp. milk
Oil for deep frying
a plastic easy squeeze bottle

Method

  • Sieve 1/2 cup maida and besan together. Make a batter using warm water.
  • Keep aside for 24 hours. Add remaining maida and food colour and more warm water if required.
  • The batter should fall easily when poured – Not too thick not too thin, keep it aside.
  • Make syrup of the sugar and water. Boil it well. Make one string syrup. 
  • Fill the bottle with batter.
  • Heat oil well in a shallow frying pan and form jalebis in the form of concentric circles about 2 inches on the outside.
  • Fry till crisp, drop into hot syrup. Drain with a perforated spoon, serve hot.

Note : I used a bottle for preparing jalebis…you can use a ziplock bag too. Just cut the corner of the bag. The hole should be about the thickness of a knitting needle.

Well…i would be sad of course..but I will get over it…and move on!

Deepthi…Never met her in person yet..got to know her through a social community. She is one cute n sweet person, intelligent! It would be great hanging out with her!! waiting for the day when we would finally meet!

Tomato spinach peas soup

These days i have been experiementing with different varieties of soups. Last week, i tried with celery..this week i tried with peas and it came out quite well. All the veggies are boiled and i dont throw the water away as it contains all the essential nutrients. In case you want your soup to be thick and you can strain the excess water and use it as a vegetable stock for other recipes.

The season is changing..and winter is just around the corner…so kick off your body’s immunity with these nutritious soups!! try it out and let me know!

Ingredients

1 cup chopped tomato
1/2 cup peas
5 spinach leaves
1 cup chopped carrot
1 cup chopped onion
2 crushed garlic pods
1/2 cup chopped spring onion
1 cup boiled corn

For garnishing
salt to taste
pepper powder
1/2 tbs sugar
Method

  • Take a pot and add all the chopped vegetables and add 2 cups of water.
  • Boil for at least 10-15 minutes and let it cool off
  • Blend all the blanched vegetables in a blender and strain.
  • Now heat the strained liquid and add salt, pepper and sugar.
  • Add 1 cup of boiled corn and mix it well.
  • Serve this delicious soup hot with croutons.

Yummy Celery soup

Hii all…seasons are changing..so better be prepared. This winter, i will make sure to have soups almost every alternate day. Soups are healthy and highly nutritious. Soups help in building resistance power and immunity. I am submitting this yummy celery soup for the event “No Croutons Required”

I came across one article about negative calorie foods and I was quite amazed at how nature provides with everything..it gives dates which are high calorie food as well as celery which is a negative calorie food.

Negative calorie foods are foods, which use more calories to digest than the calories food actually contains! Calories from these foods are much harder for the body to use. In other words, the body has to work hard in order to extract calories from these foods. Even though a food may contain equal amount of calories, much less of these calories can possibly turn into fat in negative calorie foods as fewer calories are actually available to the body. This gives these foods a tremendous natural fat-burning advantage.

Isn’t it wonderful!! Frankly speaking I never knew it in fact I used to eat celery only in salads..but this time i thought of using it in soup. This soup came out quite well. I love corn…so i always add cupful of corn in the soup..this time i added some seasoned croutons too..which gave really nice flavour!

You can garnish the soup with herbs like parsley, thyme or coriandar. Here is the recipe..Have the soup and enjoy the season!

Ingredients

4 sticks of celery chopped
2 carrots chopped
1 cup onion chopped
1 garlic pod
1 tomato
2 cups frozen corn

For garnishing

1/8th Crushed pepper
1 tsp Sugar
Salt to taste
Bread croutons

Method

  • Put all the chopped vegetables in a pot. Add 2 cups of water and boil it on medium flame for 15 minutes.
  • Using a colandar, strain the boiled vegetables. Do not throw the filtered water. It contains all the nutrients :)
  • Now blend the boiled vegetables in a blender adding little bit of filtered water and then strain the whole blended mixture.
  • Again heat the soup on medium flame and add salt, pepper, sugar. Keep stirring for 5 minutes and then switch off. The yummy celery soup is ready to be served!! Enjoy it with seasoned croutons!
