Andhra style Pretzels…urf Chegodi

My attempt at making andhra style pretzels :D i had fun making them…

 

Ingredients

3/4 cup rice flour
1/4 cup maida
1 tsp aijwain or vamu
2 tsp sesame seeds or nuvvulu
Salt to taste
1 tsp red chilli powder
1 cup water
1 cup oil for deep frying

Method

  • Boil 1 cup of water in a pan and add salt to it. Mix it well.
  • Sieve the flours and add aijwain, sesame seeds, red chilli powder.
  • After the water has boiled, take it off the stove and mix the flour slowly into the water. It will quickly change into solid form.
  • Cover it with a lid and let it cool off.
  • After it has cooled, grease your palms with ghee or oil and knead the dough. Take one small round ball and make circular shapes. I tried making pretzel shapes :) you can try any shape.
  • Deep fry and place them on an absorbent paper so that excess oil is soaked.

Enjoy it with hot tea! Its a perfect afternoon snack!

Salt biscuits..

My first attempt in baking salt biscuits…… :)

 

This is the first time i have tried baking biscuits…I have tasted many biscuits but the one I really cherish and love are the peanut biscuits which are available in a local store (kendriya bhandar in delhi) I dont know how they make those biscuits…do they add maida or wheat flour..i dont know..i am still trying to figure out! But this is my attempt in baking biscuits..i will keep trying and posting…. :) enjoy these cumin flavoured biscuits..

Ingredients

Flour – 1 cup
Cumin seeds – 1/2 tbsp
Baking soda – 1/2 tsp
Salt – 1/2 tsp
Brown Sugar – 1 tbsp
Oil – 3 tablespoons
Milk – 1/4 cup

Method

  • Preheat oven to 350 degree F.
  • In a large bowl, mix together the sieved flour, baking soda,sugar,salt and cumin seeds.
  • Add the oil and milk and knead the flour. Roll out the dough using a rolling pin to about 2 mm thick.
  • Using a cookie cutter cut into desired shapes and carefully transfer them to a lined baking sheet.
  • Bake them in a preheated oven for 20 minutes. Transfer them on a wire rack and let them cool off
  • Keep the biscuits in a tight jar so that they dont get soggy.

Green tomato chutney

Ingredients

10 green tomatoes
5 green chillies-small
2 garlic pieces
2 red chillies
1 tsp mustard seeds
1 tsp cumin seeds
A sprig curry leaves
1 tsp chana dal
1 tsp urad dal
Salt to taste
3 tsp tamarind paste

Method

  • Take a deep pan and add fry the tomatoes in pan with 3tablespoon oil till they become soft.

  • Now take another pan and add 1 tsp of oil and fry mustard seeds, cumin seeds, chana dal, urad dal, garlic, curry leaves and red chillies. After its done..cool it for a while.
  • Grind the tempering into coarse powder..add cooked tomatoes and tamarind paste. Add salt and grind.
  • Garnish with chopped coriander leaves. This tasty chutney is great when eaten with either raw onion/green mirchi..best with hot hot omelet and rice. Also good with Idlies/dosas…

French Beans fry curry

Ingredients

2 cups chopped french beans
Curry leaves

For tempering
1 tsp mustard seeds
1 tsp chana dal
1 tsp urad dal
1 tsp jeera
3 red chillies
1 tbsp popula karam
1 tsp sesame seeds
oil
salt to taste
A pinch of turmeric

Method 

 

 

  • Take a deep pan and add 1 tbsp of vegetable oil. Add mustard seeds, chana dal, urad dal, jeera, red chillies, curry leaves and mix well.
  • Add the chopped french beans and mix well. Add salt and cover it with a lid so that it is cooked properly. Keep mixing it inbetween. It will take 15 min to cook properly.
  • Sprinkle Popula karam and sesame seeds and fry it for 10 more minutes.
  • The beans will turn crispy and it tastes really good with chapatis or rice.
