Oats and Semolina laddu – Diabetes special

My dear mother had this amazing idea of mixing oats and rava to make delicious laddus. This is best sweet that diabetes patients would love to eat to ease their sugar cravings. Rolled oats are full of nutrients,fibre and protein.

According to WHO, oat protein is nearly equivalent in quality to soy protein.

This is one simple recipe to make and its a great chance to make people with diabetes smile! :)

Ingredients

1 cup rava or semolina
2 cups rolled oats
1 cup sugar or equal sugar or sugarless sugar
Almonds and pista nuts powder
dry kismis
3 tbs cold soy milk or skim milk
1 tsp cardamom powder

Method

  • Roast rava and oats seperately.
  • Grind them along with sugar.
  • Add 3 tbs milk and mix it well..and make round laddus. You can add kismis too.

Black eyed beans curry

Black eyed beans or lobhia (in hindi) is one of the rich source of fibre..here are some details

Diet Nutrition & Black-Eyed Beans:

Black-eyed beans have a smooth texture, pealike flavour and are good when mixed with other vegetables. Like most beans, black-eyed beans are rich in the best sort of fiber – soluble fiber – which helps to eliminate cholesterol from the body. They are a good source of folate, potassium, copper, phosphorous and manganese. As a high-potassium, low-sodium food they help reduce blood pressure. Not only are they low in fat, but when combined with grains, beans supply high quality protein which provides a healthy alternative to meat or other animal protein. Beans also contain protease inhibitors which frustrate the development of cancerous cells.

Here is one simple beans dish..try it out and let me know! :)

Ingredients

1 cup Black eyed beans soaked overnight
1 cup chopped tomato
1 onion finely chopped
2 green chillies finely chopped
1 tsp ginger garlic paste
1/2 tsp garam masala powder
or
1/2 tsp pepper seeds
1/2 tsp dhaniya seeds
2 tej patta or bay leaf
3 cardamom pods
1/2″ in cinnamon stick
1/2 tsp cumin seeds
salt to taste
1/2 tsp red chilli powder
a pinch of turmeric powder
2 tbs Oil

Method

  • In a pressure cooker, add oil and fry all the masala ingredients one by one.
  • Fry onion and green chillies till onions are translucent. Add ginger garlic paste and fry well.
  • Add chopped tomatoes and add salt and let it cook
  • Add the soaked black eyed beans and add 2 cups of water. Pressure cook till 3 whistles.
  • After it is cooled off, take the lid off and cook again for 10 min. Adjust salt and red chilli powder. You can add a little bit of garam masala here.
  • Garnish it with coriandar leaves and serve hot with either rice or chapatis

Paneer tomato chilliiiii

Here is another of my hubby creation..saturday was out kitchen break day..so he almost prepared everything.. :)  So..you can very well imagine..cooking time for this dish is quite less..just 15 min..hmm so much for getting a break!! Well..after coming to US, my spice level has gone down considerably..but sometimes you need a little spice to jolt you! haha so this is the curry for those who crave for something spicy and aromatic food..aromatic because of cinnamon and cloves..hmmm

so here it goes..

1 cup -Paneer/Cottage cheese cubes
1 cup chopped red onions
1 small can of Tomoto puree
3 green chilli – Chopped finely
1/4 th cup chopped mint leaves
1/2 in -Cinnamon stick
5 cloves
coriander leaves for garnishing
1 tsp Ginger garlic paste
1/2 tsp chilli powder
1/2 tsp salt.
Olive oil

Method

  • Heat 1 spoon olive oil and add onions.Fry them for 5 mins and add ginger-garlic paste, cinnamon,cloves and chopped green chilli.
  • Add panner and fry till they turn lil brown
  • Add tomoto puree and after 2 mins add 2 cups of water.Now add Chilli powder and salt.
  • Keep on Medium heat for 5 more minutes.
  • Now add Mint leaves and let it cook for few more minutes if you want the gravy to be thick.
  • Garnish it with coriander and its ready!!!!!

Goes great with butter naan or chapatis!!

Lemon cucumber dal or Dosakaya pappu

These gourd relatives are crisp, cool, and juicy, but get only so-so marks for flavor and nutritional content. In south india..especially in my grand mom home..this dal was served almost every alternate day. Its best to eat this during peak summer months because it has some sort of cooling affect on the body. Dal or pulse has its own nutrition value.
Here is the simple procedure for making this delicious dal.

Ingredients

1 cup peeled cucumber pieces
1/2 cup chopped onion (optional)
2 green chillies chopped
1 sprig of curry leaves

For tadka or tempering
1/2 tsp mustard seeds
1/2 tsp jeera
1/2 tsp chana dal
1/2 tsp urad dal
Turmeric
1/4 tsp Red chilli powder
Salt to taste
Coriandar for garnishing

Method

  • Peel the cucumber and cut it into bite size pieces
  • Pressure cook tuvar dal, cucumber pieces, onions and mirchi. Add a pinch of turmeric too. Cook on medium heat and switch off the stove after 3 whistles and let it cool.
  • Now take another small pan, add 1 tsp oil and add all the tadka ingredients.
  • Transfer the popu into the cooked dal and mix it well.
  • Add salt and red chilli powder. Cook on medium heat for five more minutes. Garnish it with chopped coriandar leaves.

It goes well with hot steaming rice :)
